I like Thursdays: July 9, 2026

 


Hello and welcome to "I like Thursdays" hosted by LeeAnna at Not Afraid of Color!

After the heatwave, we finally had some good rain.  We were lucky during the storms.  We didn't have much damage but some areas in our valley had to declare a state of emergency.  

During the rain storm, I spent some time in the kitchen!


I like my new stove/oven.  Ours died back in May and the new one came in about 2 weeks.  This week I baked spinach pie and a peach crisp.  My husband loved both!


The spinach pie recipe is here.  After I make it, I freeze a bunch of slices because it nicely heats up later! 
 
                                  

Speaking of food, Lana's prompt this week is:  "How do you make potato salad?  What do you put in it?"

BACON!!!  

Our family doesn't have a specific recipe.  I have no idea where it orignated.  A lot of Pennsylvania Dutch use a warm sweet/sour bacon dressing on their potato salad.  It's the only way my one neighbor likes it.  

We don't use the sweet sour dressing.  My trick is that I finish boiling the potatoes, drain, and place in a big bowl.  You place the warm crumbled bacon on top of the potatoes and put a towel on top of the bowl.  The steam from the potato softens the bacon a little.  Cool and add mayo, celery, onion, hard boiled egg.  I season ours with paprika, pepper and celery seed.  That's it.  It's the thing my family and friends request the most from me.  Yes, lots of boys who want their bacon.
